The Blender Bottle Sport Mixer

I own two of these mixers! The first Blender Bottle Sport Mixer I purchased was the black/pink bottle, once I used it; I quickly realized this darker version made it harder to see if the ingredients were thoroughly mixed inside the bottle.  It also made it hard to take advantage of their oz./ml markings to measure out the amount of water one drinks, while using it as a water bottle.   For this reason, I later purchased the pink version of the Blender Bottle Sport Mixer and as I suspected, had no issues with this bottle. Although, I still use both mixers, I do find myself reaching for the pink one, more often.

I take these babies with me when I need to mix up a protein shake on the go or after a workout and regularly use them as a water bottle while I’m out running errands because they’re just super stylish that way! Even though, I haven’t tried yet, according to their website, the Blender Bottle Sport Mixer could also be used to make scrambled eggs, omelets, dressings, pancake batter and gravy…all good to know!

What makes this bottle so different and awesome from the rest?  While besides being the most adorable blender bottle out there, it comes with a patent Blender Ball, a surgical-grade stainless steel mixing ball.

This is what creates the magic of a smooth, creamy, clump-free drink, every time you use it.

The Blender Bottle comes in two sizes ased the all pink bottle.  They are as cute as they look in the picture! :) 28-ounces and 20-ounces and sold in retail stores, online and Blender Bottle’s website.

Shrimp & Roasted Veggie Pasta Salad

Ingredients

  • 1 – 8 ounce Fiber Gourmet Light Rotini pasta
  • 12 ounces of cooked shrimp
  • 3/4 cup Ken’s Light Italian dressing
  • ½ c fat free feta cheese
  • 1 zucchini
  • 1 red onion
  • 10 small baby portabellas
  • 2 bell peppers (I used red & orange)

Directions

Preheat oven to 400°

Marinade shrimp in ½ c of Ken’s Light Italian Dressing

Toss the sliced zucchini, red onion, baby portabellas and bell peppers with the remaining 1/4 cup of dressing wand lay unto a cookie sheet pan.

Roast veggies, stirring once, until they are tender, about 25 minutes.

Meanwhile, cook the pasta according the cooking package.

Once the pasta is cooked, place it in a bowl and toss it with the roasted veggies and shrimp.  Top with feta cheese.

Serve on a bed of lettuce.

Serving Size: 4 (about 1 ½ cups)

344 calories/8.25g fat/ 56.7g carbs/20.7g fiber /9.2g sugar/20.1g protein

Tortilla Crusted Mahi Mahi

Faux fried fish with a twist, super yummy & versatile.  Eat it with veggies and potatoes or add a bean salad and salsa to it!

Ingredients

  • 1 whole wheat tortilla
  • ¼ Tsp. Cayenne pepper, chili powder & salt
  • ¼ c egg whites
  • 12 oz. of Mahi Mahi

Directions

Preheat oven to 400 degrees

Slice mahi mahi into strips (approx. ½ inch wide and 2-3 inches height) and season fish very lightly with salt and pepper (I bought mine already chopped into pieces at Trader Joe’s).

Toast the tortilla in the oven until crispy (approx. 3-4 minutes on each side)

 

Grind the tortilla in the food processor with the cayenne pepper, chili powder and salt and place the seasoned tortilla crumbs in a shallow bowl

Dip the mahi mahi into the egg whites and then press both sides of the fish into the seasoned crumbs

Spray cookie sheet with cooking oil and lay each piece down

Cook on one side for 6-10 minutes and then turn over the fish to the other side

Serving size: 2

214 calories/3.25g fat/ 7g carbs/3.5g fiber /39g protein

Skinny Jeans Pita Pizzas

Because you can still eat this pizza and fit in your skinny jeans!

Ingredients

  • 1 whole wheat pita
  • 1 8 ounce can of tomato sauce
  • 3 Tbsp. of pesto sauce
  • 1 diced chicken breast
  • 1/3 cup of Spinach
  • 2 Tbsp. marinated artichokes
  • ½ sliced Peppers
  • ½ small Red onion
  • ¼ c feta cheese

Directions

Preheat oven to 375 degrees

Separate pita in order to get two pizza crusts and cook on each side for 4-5 minutes, until crisp.

Mix pesto and tomato sauce and together (makes 3 servings, reserve the rest for another meal)

Spread the pesto tomato sauce over each pita half.

Top it with veggies first, then the chicken and the cheese last.

Place the pizzas back in the oven for about 5 minutes to allow the veggies to slightly cook and all the flavors to come together.

Serving size: 1

460 calories/13.6g fat/ 46.5 carbs/7.5g fiber /6g sugar/38.5g protein
