Chocolate Caramel Almond Treat

Boo!! ;)

Scared?  Should be! This recipe is terrifying addictive, alarmingly simple and hair-raising good!! :)

Ingredients

  • 4 tbsp of popcorn kernels
  • 2 tbsp caramel almond spread
  • 2 tbsp dark chocolate chips
  • 1 oz of chopped cocoa roast dark chocolate almonds (optional)

Directions

  • Place popcorn kernels inside a brown paper lunch bag.
  • Fold the top of the bag over and place the bag in the microwave.
  • Microwave on high for 2-3 minutes, or until there are about 5 seconds between pops.
  • Lay popcorn on baking sheet and if you plan to add chopped almonds to your popcorn, toss them in with the popcorn at this point.
  • Melt dark chocolate chips in microwave, checking at 20 second intervals and stirring each time.
  • Once the chocolate is melted, add caramel almond spread to bowl and stir together.
  • Drizzle chocolate caramel almond sauce over popcorn.
  • Place popcorn in the fridge and allow sauce to harden.

Serving Size: 6 (1 cup each)

Without almonds: 82 calories/1.5 g saturated fat/12 g carbs/4.5 g sugar/1.7 g fiber/1.8 g protein

With almonds: 107 calories/1.7g saturated fat/13 g carbs/4.7 g sugar/ 2.2 g fiber/ 2.8 g protein

Breakfast was an egg scramble with Julian’s Bakery Cinnamon Raisin Bread.  Each one of those slices have a whopping 16 grams of protein! Wow, right?  Instead of drinking my coffee hot, I decided to have it cold using cooled coffee, ice cubes, unsweetened almond milk, stevia and a tablespoon of vanilla protein powder. Protein overload, I was full for hours!
I wasn’t really craving anything special for lunch yesterday so I put together a few things.  Hard boiled eggs, cucumber with jalapeno greek yogurt and cottage cheese that I mixed with pumpkin puree, stevia and pumpkin pie spice.  The pumpkin pie cottage cheese was my favorite part of lunch and I’m not even a huge fan of cottage cheese! I am trying to learn to love it, though. ;)

Dinner was my favorite meal of the day! Maybe it was because it consisted of sweet potato fries? :) Along with those tasty fries I had a chicken burger salad that was equally as delicious.

How do you eat your fries?  I like to add Sriracha to my ketchup. Any way to get some extra heat in my meals, work best for me! :)

Question: What’s your favorite candy?  Mine would be dark chocolate with nuts! :)

Eggie Eggs

Happy Tuesday to you friends!

Back in action with eggs for breakfast again!  To compliment my ham & eggs, I served Julian Bakery’s Amazing Sourdough bread on the side.  This breakfast was PACKED with protein, 33 grams to be exact and since we’re talking stats 375 calories and only 9 net carbs, all because of that amazing bread. :)

Fueled and ready to start my day, I got outside and did a 6 mile run.  To tell you the truth though, after taking a week and a half off from running, I wasn’t too psyched about going for that run.  After about the first mile though, I got back into the swing of things and actually really enjoyed myself out there.

I couldn’t get enough of that bread so for lunch, I made a grilled cheese sandwich.  Inside my sandwich went 2 tbsp of light shredded cheese, 1 laughing cow cheese wedge, turkey, artichokes and jalapenos. I also added a few carrots with jalapeno greek yogurt dip to get in some veggies.  The sandwich was delicious to say the least.

For dinner we had the best type of leftovers that you can imagine…soup! For some reason, it always tastes better the next day or even a few days later.  The hubs & I enjoyed the last bit of my Chili Verde Soup from Saturday night.  I’m sad that it’s all gone now but I’ll definitely be making that again, soon. :)

So, do you remember how last week I bought Eggies?  It was on clearance at Walmart.  I tried it out last night…and it worked pretty well.  Now, I’m not going to lie and say it was as simple as 1, 2, 3 because that just isn’t true.  The prep time to make hard boiled eggs using Eggies was about 5 minutes! :(

First, I had to oil the containers, top and bottom but I couldn’t just spray the  containers with cooking oil, nope!  According to the directions, “If using cooking spray, spray a paper towel and wipe the inside of each piece” so that’s what I did.  I then put the containers together (there’s 4 pieces to each Eggie) and then got crackin’! Once all the eggs were cracked and inside their containers, I screwed each lid securely on top of each Eggie to ensure no leakage.  Once that was all done, I placed my Eggies in a pot of warm water, floating per instructions, brought the water to a boil and cooked for 15 minutes.

After cooling, my eggs popped right out! They turned out looking nice and pretty much flawless.  The only issue was the time it took since I bought Eggies to try and save time. When I count the prep time and the time to wash all those extra little pieces, it comes out taking pretty much the same time without using the Eggies.

So with all that being said, the next time I use Eggies, will probably be when I plan to make deviled eggs for a party or an event.

TV Workout

It’s Monday again!

Who needs a little push to start this week off right?  I do! I do! :) I created this TV workout because it seems the colder outside it gets the more time I want to spend cuddled on the couch.  While no more excuses…join me and fit in some of these moves while watching TV.  Melt, Burn and Torch those calories away!  No equipment is needed, so no excuses are allowed! ;)

Eats from yesterday…

I woke up craving something sweet. To drink I made pumpkin pie coffee and a pumpkin pie protein shake with vanilla protein powder and pumpkin puree as the key ingredients.  To eat, I topped a sweet potato with greek yogurt that was flavored with pumpkin puree, pumpkin pie spice and stevia…it was great!  The sweet potato was  a little too big though and I wasn’t able to finish it all.

After church, we went to a restaurant called Buckhorn Grill.  I ordered the grilled chicken sandwich with a side of roasted veggies and requested the hubs to order sweet potato fries as his side so I can have a few, everything was really good! :)

I think I’m addicted to eggs!?  Since I didn’t have them this morning, I was craving them for dinner, so that’s what I had! :) Into the bowl went, eggs, ham and salsa,  topped with guacamole and sriracha.

Sangria and Soup

Happy Sunday Friends!

Last night, we had the pleasure of entertaining friends.  Good food, good friends, good drinks…who can ask for anything else?

As promised, here are the recipes for my red & white sangria and delicious spicy soup recipe to end my post on a warm and cozy note. :)

Red Wine Berry Sangria

  • 2 Bottles of red wine
  • 8 oz Brandy
  • 8 oz of Ocean Spray Diet Blueberry Pomegranate Juice
  • 8 oz sparkling water
  • 2 cups of Berries
Instructions
Mix all the ingredients together and refrigerate overnight or allow to sit for at least 4 hours.

 

White Wine Appletini Sangria

  • 1 Bottle of white wine
  • 24 oz of sparkling water
  • 6 oz Vodka
  • 1/2  Appletini Crystal Light pack
  • 3 chopped apples

Instructions

Add all ingredients together and refrigerate overnight or allow to sit for at least 4 hours.

 

Chili Verde Soup

  • 1 (16 oz)  Del Real Chili Verde container
  • 1 Qt. Low Sodium Chicken Stock
  • 28 oz Mexican Style Hominy, drained
  • 10 oz Trader Joe’s Microwave Perfect in 3 minutes Brown Rice (not pictured)
  • 4 oz can chopped green chiles
  • 1 Tbsp. Mrs. Dash Fiesta Lime
  • 1 tsp. sea salt
Instructions
Cook brown rice in microwave for 3 minutes and then dump all ingredients into one large soup pot. Allow to simmer on the stove for 1 hour.

 

 

I threw this soup together at the last minute, using ingredients I already had in the fridge and pantry.  I will definitely be making it again, everyone who tried it loved it! :)

You need to try out one or all of these recipes…they were delicious!!!

Happy Weekend Friends!

We arrived back home last night shortly after 8 o’ clock…just in time to quickly unpack and head over to my brother’s house for a Halloween party! :)

Check out the delicious food they put together, so pretty & delicious!

Sonia put together these super cute party bags for each one of us. Inside my bag was a small bottle of wine, hand sanitizer and candy. It was such a unexpected sweet touch to the party! :)  I think she needs to be a professional party planner, don’t you?

Not sure how I could follow-up after all that fun going on up there ^^^^^ since yesterday morning, I was being totally lame and was not in the mood to workout at all.   It was one of those days where I needed someone else to push me to do it so I started browsing YouTube for a workout video.  I came across Has Fit and did their Ultimate 10 minute cardio workout and Best 30 minute cardio kickboxing workout.  Those two workouts together were just what I needed.

And as far as the rest of my eats from yesterday go…

Breakfast was nothing too exciting just a bowl of cereal (Special K Protein Plus + Fiber Plus Cinnamon Oat Crunch) topped with half of banana.

Lunch was the clearly the show stopper of the two meals, as you can see! ;)  Before heading home, we stopped at a place called Jalapeno’s Taco Shop for lunch.  We ordered what turned out to be a feast with the enormously generous plates that were placed in front of us.

I ordered the chicken fajitas with a Sobe Lean honey green tea. The hubs ordered tacos with a side of beans and a Dos Equis Amber.  We also ordered a ceviche to share. We ended up packing it to-go though since they brought it at the same time as our lunch and we we couldn’t even finish those plates.  Food coma for sure on the drive home! ;)

That’s all for now! Lots to do today, like finish unpacking, clean house, wash clothes and get in a workout.  Later this evening, we have dinner plans with our friends.  I’m super excited to see them, it’s been way too long.

Not on my grocery list

I went to store to grab a few things and came out with a little more than I planned.

1.       Fiber Plus Cinnamon Oat Crunch

I blame this one totally on the husband! :)  He wanted cinnamon graham crackers and since I knew I’d be tempted to chow down on some with him, I grabbed this cereal instead to munch on as a snack and to have as breakfast in the morning.  Each serving is ¾ cup, 110 calories and 9g fiber

2.       Special K Protein Plus

Since we were already down the cereal aisle, I grabbed this box too.  I was drawn to the extra protein and figured it’d be good to have for breakfast this morning with my Fiber Plus Cinnamon Oat Crunch.   Each serving is ¾ cup, 120 calories, 3g fiber and 10g protein – first time trying it.

3.       Popcorn Seasoning White Cheddar

For making my own Pirate’s Booty at home! Air popped popcorn + White cheddar seasoning = WG’s Booty! ;)

4.       Mrs. Dash Extra Spicy Seasoning Blend

I LOVE hot & spicy, no further explanation needed.

5.       Halloween Shirt & Bandana

To be fun & festive when we take Mila trick or treating. It glows in the dark! How cool is that?

6.       MaraNatha No-Stir Raw maple almond butter & MaraNatha All Natural Caramel Almond Spread

I’ve seen these butters all over Instagram and have been secretly crushing on them…so I grabbed them both! Who knows when I’ll find them again!? We’re out of town! ;)

7.       Eggies

I couldn’t help myself! It was on sale for $5 and if I never have to peel eggs again $5 was well worth all the time I’ll save. :)

Quick glimpse of my eats yesterday.

  • Breakfast: Oats topped with an apple and 1/2 banana and a side of hard boiled eggs
  • Lunch: Best salad ever!  I need to recreate this at home :)
  • Dinner – Carl’s Jr. Famous Burger (I turned a 680 calorie burger to a 300 calorie burger ordering it without mayo or a bun and eating  it with a lettuce wrap)
