I took the first photo at the beginning of my 2 week gluten-free experiment and the second one yesterday.
Not a super huge difference, but I can tell and it’s only been two weeks!
A few notes from my experiment:
Two out of the 4 cheat meals that I allowed myself in this 2 week experiment were not gluten-free and I could definitely tell the difference in my stomach and digestion system after both of those meals.
I have to be honest, the transition to go gluten-free was pretty simple! I was still able to eat most of the same foods that I normally eat like; leans meat, veggies, fruit, brown rice, beans, quinoa, sweet potatoes etc.. The foods that I did have to eliminate were 100% whole wheat bread, 100% whole wheat pitas and 100% whole wheat tortillas. I found easy swaps for those though with delicious gluten-free bread and brown rice tortillas. I lucked out that Trader Joe’s carries gluten-free oats because honestly my life wouldn’t be complete without oats in it! Check out my Recent Eats #4 & #5 to see exactly what I did eat.
You’re probably wondering, will I continue to eat gluten-free? Yes, this time without a date! I’m not sure if this is going to be a lifestyle change yet but for now, it works for me so I am going to ride with it!
