Yesterday morning we woke up to a runny nose baby! :( She’s feeling better today but because she was under the weather yesterday, she & I spent most of the day reading books and laying on the couch.  I did manage to get in an arm/shoulder workout, along with 35 minutes on the elliptical while she napped so I consider that a success. :)

For breakfast yesterday, I jumped at the opportunity to try out a high protein bagel from P28 with eggs, avocado and sriracha.  WOW – it was delicious!! It totally felt like I was indulging in a guilty treat. :)

This breakfast totally deserves a close-up shot! :)

The bagel is a little high in calories but I’m okay with that since it’s super high in protein. Anyway, I can always choose to eat half the bagel, if I wanted to cut down on the cals.

Lunch was tomato & roasted red pepper soup from Trader Joe’s that I added a few tablespoons of greek yogurt to add more protein and make it even more creamier.  I also added a half of turkey sandwich and a few grapes since I skipped my morning snack because breakfast kept me full through the morning.

Dinner was quick and delicious.  I set a pot of black beans on the stove during the day to cook so I can pair it up with this store bought chili verde (pork & green chili).  Super easy to make and the nutritional facts are not all that bad either.  I bought this at Costco but I think they sell them at regular grocery stores?

Here’s hoping baby gets back to feeling 100% today, if not we may have another low key day. Hey, it’s cold & raining outside so I’m okay with that! ;)

    So creative, food looks so good. Can I just use blk beans in a can from TJ’s instead of soaking the beans all day?

      Yes! Just make sure to rinse them off first to get off all the extra sodium. :)
