This recipe was inspired by Lindsay‘s apple chips. As soon as I saw them, I knew I wanted to make them. I finally did a few days ago and boy, am I glad I did. The only thing I changed was the spice. She sprinkled her apples with cinnamon, I seasoned mine with pumpkin pie spice.

Ingredients
- apples
- pumpkin pie spice
Directions
- Slice apples as thinly as possible (Core apples if you can, I didn’t have an apple core
) - Place on a baking sheet (sprayed with non-stick spray)
- Sprinkle apples with pumpkin pie spice & toss so the seasoning evenly distributes to both sides of the apple slices.
- Bake at 225 degrees for one hour.
- Flip apples over and bake for 1 more hour.
- Allow slices to cool completely.

Yum. Yum. Yum. I took this little treat to my mom’s house and she loved them too.

Breakfast was coconut flour pancakes again. I told you, I was obsessed!
This time I tried only doing egg whites…not a good idea though, the pancakes weren’t their fluffy self. Although, the taste was pretty much the same, going forward I’ll stick with one whole egg/one egg white. This time for the topping in addition to my chocolate casein frosting, I added chopped almonds and banana.

For lunch, I had a pretty plate of hard boiled eggs with spicy hummus & sriracha and cucumber slices with hummus, sriracha, turkey and smoked gouda. Simple, easy and so good for you!

About an hour & a half later, I was hungry again so I took the opportunity to try a new flavor from my variety pack of quest bars. Peanut butter supreme was good but didn’t make it to my top 5!

This doesn’t happen often but yesterday I had no idea what to make for dinner so you can only imagine my excitment when vitapizzas arrived at my door.
Vitalicious was kind enough to send me a few pizzas to allow me to sample and I wanted to hug the UPS guy for delivering them on the most perfect day! Since it was only 4:30 when they arrived, I had to put them in the freezer for another 1.5 until it was dinner time.
I made a quick salad to go along side my pizza, but clearly my cheese & tomato pizza was the star of the show with 190 calories, 3g fat, 19g fiber, 15g protein. I was extremly sad when I was all done!

While my friends, I need to run! Mila has a doctor appt to get her 2nd flu shot and then…we got ANOTHER date night planned on the books. Yaaayyy!! It’ll be a triple date night with my brother, sister and our significant others, happy hour first and then it’s Breaking Dawn time!
