I enjoy sharing photos of my meals with you in hopes that it will inspire you to venture out, try one or a few of these dishes and just really show you that eating healthy doesn’t have to be boring.
So, let’s begin! Shall we?
Fruit, turkey bacon and two whole eggs cooked in sliced peppers.

Low carb tacos (pork loin, salsa, black bean dip from Trader Joe’s, avocado & parm cheese)

These are my Fluffy Protein Pancakes with pureed strawberries, cottage cheese & greek yogurt topping.

Chicken meatballs, avocado & salsa stuffed in a whole wheat pita, veggies and spicy greek yogurt.

Chicken-less Orange Mandarin Morsels (purchased from Trader Joe’s) with ‘clean’ fried rice.

Baked oatmeal topped with banana slices and cottage cheese & greek yogurt pureed together to make a smooth whip topping.

Canned salmon with more of my ‘clean’ fried rice and topped with avocado & sriracha!

Stuffed salmon (purchased from Costco) brown rice and roasted asparagus.

French Toast Bake – place two slices of bread that have been torn in pieces into an individual casserole dish and top with french toast mix (egg whites, cinnamon, vanilla extract & stevia). Bake for 20 minutes at 350 degrees. I topped it with greek yogurt (that I turned pink with a little red food coloring for V Day) and strawberries.

Mexican Shrimp Salad (shrimp, black bean dip, brown rice, avocado, bell peppers and roasted corn)
