Quinoa, spicy ground turkey & avocado – I love the combination, so yum!!
Spinach Protein Bake
Same dish as above, quinoa, spicy ground turkey & avocado. I had this dish a few times this week, it’s a great go-to!
Quinoa, black beans, salsa and my egg veggie muffins.
Gluten-free Protein Oatmeal Bake – Once I perfect my recipe, I will post it.
Mexican Mahi Mahi salad – I used a tortilla pan to make a guilt-free, gluten-free corn tortilla shell.
Sliced turkey breast, quinoa and roasted veggies.
PB&J French Toast – I used Udi’s whole grain gluten-free bread for my toast, pb2 for my peanut butter and heated up frozen berries for my jam.
Salmon, asparagus and a sweet potato with white chocolate dreams peanut butter.
Another try at my gluten-free protein oatmeal bake.
3 Gluten-free Tacos- I used broken up chicken meatballs, 2 tbsp of brown rice (per taco) & spicy hummus.
Coconut flour pancakes – with pumpkin purée and topped with PB2.
Saturday night, we celebrated my sister’s birthday and I just couldn’t pass up this delicious piece of cake & icecream! The frosting on the cake was so light and fluffy and it was filled with banana and strawberries. Yum!
