
Ingredients
- 1 bell pepper (any color is fine)
- 6 chicken/turkey meatballs (I used pre-made chicken meatballs purchased from Costco)
- 1/2 cup ready-made brown rice
- 1/2 cup no-salt tomato sauce (bought at Trader Joe’s)
- 1 Laughing cow swiss cheese wedge
Directions
Preheat oven to 375 degrees and slice bell pepper in half lengthwise; discard seeds and membranes.
Bake bell pepper in oven ‘face-down’ for 5 minutes.
Place all ingredients (except the bell pepper) in a bowl.

Stir everything together well.

Place the mixture evenly into the bell pepper halves.
Bake at 375 for 10 minutes.

It was SO good and simple to make that I had to make it again for lunch!
