Before I get into my weekend eats, I calculated the nutritional stats for the cookies I made yesterday. I thought they tasted great, not too sweet and the texture was nice and soft.
Coconut Flour Power Cookie Nutritional Stats
Plain – without optional add-ins
45 calories, 1.8 g saturated fat, 2.9 g carbohydrates, 1.6 g fiber, 1g sugar, 2.8 g protein
Vanilla Cranberry Cookies – used vanilla protein powder & 2 tbsp. dried cranberries

48 calories, 1.8 g saturated fat, 3.7 g carbohydrates, 1.6 g fiber, 1.8g sugar, 2.8 g protein
Double Chocolate Cookies – used chocolate protein powder & 2 tbsp. dark chocolate chips

51 calories, 2 g saturated fat, 3.8 g carbohydrates, 1.7 g fiber, 1.8g sugar, 2.9 g protein

Friday evening, we had an amazing triple date night and I treated myself to Ruth Chris’ steak sandwich (since they are known for their steak) for dinner. The food was amazing & happy hour was fantastic!!!

Ahi tuna for the table and another another pomegranate martini for me!

I had more coconut flour pancakes
one day for breakfast and then switched it up and had soyrizo with 1 egg/2 egg whites in a whole wheat pita with salsa & avocado the next day.

Dinner at a Mexican restaurant was a small bowl of soup and chicken fajitas. Here’s how I like to cut the calories on my fajita plate:
- no tortillas
- usually ask for no cheese on the beans (scraped that off)
- order sour cream and guac on side (I don’t eat the sour cream and only eat a little of the guac)
- Eat all my chicken, veggies and beans with extra salsa

Capped the weekend off with an early Thanksgiving feast at mom’s & dad’s house…turkey, tri-tip, mashed potatoes, spicy sweet potatoes & stuffing. I took my tweaking of the stuffing a little overboard with all the added veggies, so I called it a low-carb stuffing.
Oh well, I thought it still taste good!
Then of course, I had to try out the pie!
I had a small piece of crumbled apple pie and a piece of pumpkin pie and whip, because you know, it’s just not complete without it!
