This isn’t one of the ‘healthiest’ posts I’ve ever written, however it isn’t completely ‘bad’ either! I wanted to pack a picnic for my husband & I, that was light and fun but still ‘semi-healthy’. After all, it’s all about balance, moderation and enjoying life.
Sooo on that note – Let’s begin, shall we!
Salami, cheese & spinach leaf stacks
(I stacked them into two columns in order to package them. Each serving is one cracker, salami, cheese and 2 spinach leafs.)
Served with a sliced bell pepper and a few chopped mini cucumbers.
In case you were wondering, I purchased my salami from Costco and it is low-sodium.

Nacho Cheese tortilla chips Pop Chips
I was over the moon excited when I saw these being sold at my local Walgrens! I happily snatched a bag of these babies to include in our picnic! Who doesn’t love cheesy, crunchy chips, every once in awhile!?!
Every picnic needs some sweets packed in it, right!?
Peanut Butter & Apple Jar
2 tbsp of peanut butter & 2 apples – perfect for two!
Measure out 2 tbsp. of peanut butter, drop it in the jar and throw it in the microwave for 15-20 seconds to create a perfect buttery bottomed jar. Chop apples, sprinkle with lemon juice (to avoid browning) and arrange neatly in the jar.
Chocolatey Protein Balls
It’s easy! I just mixed together 1/2 c old fashioned oats, 1/4 c peanut (or almond) butter, 1 scoop of protein powder (I used chocolate), 2 tbsp of almond milk, 1/2 tbsp of cocoa powder and a few drops of stevia. I melted two small squares of dark chocolate and drizzled it over. Take 1 tbsp of chopped almonds and sprinkle them evenly over the balls. Each one comes out to be 90 calories and 5 grams of protein- not too bad!
I bought this very cool storage container at Marshall’s a month ago and I finally get to use it!
Top to bottom: Salami, cheese & spinach leaf stacks, chopped bell peppers and mini cucumbers.
Chocolatey protein balls, pistachios and spicy greek yogurt dip (purchased from Costco) for my veggies.
I also packed a ton of water to keep us hydrated while wine tasting!
