
Ingredients
- 2 tbsp of coconut flour
- 1 egg
- 1 egg white
- 1/4 c unsweetened almond milk
- 1/4 c cottage cheese
- 1 tbsp of protein powder
- 1 tsp of baking powder
- 1 tsp of vanilla extract
- 1 tsp of cinnamon
- 2-3 packets of stevia
Directions
- Whisk together eggs, almond milk, cottage cheese and vanilla extract.
- Add in coconut flour, baking powder, cinnamon, protein powder and stevia and mix until everything is well incorporated.
- Preheat a griddle to medium-high heat and spray with non-stick spray.
- Allow batter to sit while pan heats up (for 3-5 minutes) to allow the coconut flour time to thicken the batter.
- Pour batter in pan for each pancake and cook for about 3 minutes (on each side) or until browned before flipping. They take slightly longer to cook than traditional pancakes.
Greek yogurt
- 1/3 c greek yogurt
- 1 tsp of vanilla extract
- a few dashes of cinnamon
Mix everything together until well blended.
Chocolate Sauce
- 1/2 tbsp of cocoa powder
- 2 tbsp almond milk
- 2 tbsp of greek yogurt
- 1/2 tsp vanilla extract
- 1 stevia packet
Mix everything together until well blended. Heat in the microwave for 15 seconds.
**Once the pancakes are done cooking, top each pancake with 2 tbsp. of greek yogurt. Finish off by pouring the warm chocolate sauce over your stack, like syrup.

Optional: Garnish with chopped nuts & a few banana slices.
Serving Size: 1 (Batter should make 3 fluffy pancakes)

For the packets I use Stevia Raw for drops, I prefer NuNaturals.
